Bakery robot slashes bread dough

Engineers at Akéo Plus have developed a vision-based robotic system for a large French bread manufacturer to automate the process of slashing or docking the surface of bread dough. The docking process prevents the occasional uncontrolled bursting of loaves as they bake and expand in an oven. It also produces an increase in the surface area of the loaf, resulting in a larger crust.
